Salmon steaks can be prepared in a variety of ways to tempt the palate of the individual partaking in the culinary delight. Ingredients:
• 2 large Avocados, peeled and cut into slices
• 3 to 4 Tablespoons of olive oil, light
• 3 Tablespoons of lime juice, freshly squeezed
• 1 Tablespoon of parsley, minced
• 1 Tablespoon of shallots and green onions, minced
• 1 Teaspoon of Dijon Mustard
• 1 to 1.5 pounds of Salmon Fillets
• Grapeseed Oil
Preparation:
1. Combine avocado slices with lime juice and put them into a blender. Blend the two ingredients.
2. Then, add the olive oil, until the avocado mixture becomes smooth.
3. Next, mix in the shallots and parsley. Blend until the mixture is combined.
4. Transfer the mixture to a bowl. Then, add mustard, salt and pepper to taste.
5. Pour enough grapeseed oil in the pan to coat the bottom. Heat the oil on medium high heat until the oil is almost smoking.
6. Add the salmon steaks. Cook 3 to 4 minutes on either side, until medium well.
7. Top each steak with Avocado Remoulade Sauce. Enjoy.

Preparation:
1. Clean the salmon steaks and leave the skin on the steaks. This will add to the flavor and also keep the salmon from breaking apart on the grill. Make sure the steaks are cut to 1.5 inches or more in thickness.
2. Marinate the salmon steaks with your favorite marinade 1 hour prior to grilling.
3. Select a gas or charcoal grill and preheat the grill to medium heat.
4. Baste the grill in oil to avoid the salmon steak from sticking to the grill.
5. Baste the salmon steaks with olive oil before placing them on the grill.
6. Place the salmon steaks on the grill. Cover the grill and cook for 5 to 7 minutes.
7. Check the salmon steaks. If the steaks are cooking faster than desired, move the steaks to a cooler part of the grill. Flip the steaks and cook 5 to 7 minutes more.
8. Remove the salmon steaks.

Glaze Ingredients:
• 2 Tablespoons of garlic, minced
• 2 Tablespoons of fresh ginger, grated
• 2 Tablespoons of scallion, minced

• 0.5 cup of rice wine vinegar

Preparation:
1. The oven should be preheated to 450 degrees Fahrenheit.
2. Prepare the glaze for the salmon steaks. Combine the ingredients for the glaze in a small sauce pan.
3. Bring the mixture to a boil.
4. Reduce the heat and simmer 30 seconds.
5. Remove the glaze from the heat.
6. Allow the mixture to cool to room temperature.
7. Heat the vegetable oil in a skillet that can be place in the oven. The oil should smoke.
8. Season the salmon with salt.
9. Sear each side until golden brown.
10. Roast in the oven for 3 minutes.
11. Brush each salmon steak with ginger glaze.
12. Roast the salmon for another minute.
13. Remove the salmon steaks.
14. Serve with asparagus, potatoes, and basil to garnish.
