There are few things more delicious than a fresh cake, but unfortunately, sometimes it’s not always possible to use an oven to make one. It doesn’t matter if your stove is broken though, there are other ways to create a cake without ever having to preheat the oven. Before you head to the store to buy a cake, consider trying one of the following recipes.

1. Refrigeration Cake
You’ve probably heard of no-bake cookies, but no-bake cake can be just as tasty. This dessert is called the refrigeration cake because the fridge does all the ‘cooking’ needed. It’s also a remarkably easy recipe and only takes a few minutes to prepare.
To start, you’ll need to gather your ingredients. Refrigeration cake is most commonly made with chocolate chip cookies, such as Chips Ahoy. The amount of cookies you use is up to you depending on how large you want your cake to be, but a minimum of 24 are required. You will also need a small container of Cool Whip, ground cinnamon, milk, and instant chocolate pudding mix.
Creating The Cake
Create the pudding mix by pouring one cup of milk into a large bowl, then stirring in the powder from the instant pudding plus one teaspoon of ground cinnamon. Whisk the mixture for two minutes until everything has dissolved and then allow the pudding to sit for a few minutes until it thickens. At this point, add the entire container of Cool Whip into the pudding and whisk again. This will create a creamy frosting.
You’ll be using the cookies to create the cake part of this dessert. To start, take a butter knife and spread the pudding generously on each cookie, stacking them on top of one another as you go. Turn the stack sideways as the pile grows so the cake begins to resemble a log. Once all the cookies have pudding in between them, frost the outer layer with the remaining frosting.
Cooking The Cake
Place the log in the fridge for at least 12 hours. As it chills, the pudding will soften the cookies and make the texture more cake like. The texture of the topping will also change due to the Cool Whip, making it a similar consistency to whipped frosting. After 12 hours have passed, you can take the cake out of the fridge and serve.
Tip
Optional
You can also top the cake with chocolate shavings by taking a chocolate bar and running it across a cheese grater. This enhances both the taste and appearance.
The pudding and cookie flavors may be changed if preferred. For example, instead of using chocolate chip cookies, you can use Nilla Wafers with vanilla pudding. Vanilla cakes can also be topped with butterscotch or caramel drizzle instead of chocolate shavings.
2. Lava Cake
If you’d rather have a hot dessert instead of a cold one, you can make a lava cake with just a few simple ingredients. All you need is oil, chocolate frosting, a box of chocolate cake mix, and the ingredients listed on the back of the box. Even better, this cake only takes about 15 minutes to cook in the microwave.
Making The Cake
To start, open the chocolate cake mix and add the ingredients. If given the choice to use butter or oil, use oil as this will make the cake easier to cut. Mix everything together until there are no visible lumps in the batter. Next, get a microwave safe container, such as a glass pan, and grease generously. Pour the cake batter into the pan.
Now it’s time to add the ‘lava’ to the cake. Open your container of chocolate frosting and scoop a large spoonful directly onto the top of the cake batter. Repeat this step until the frosting is evenly distributed throughout the batter. As the cake cooks, the frosting will sink to the middle of the cake and melt. This will create rich chocolate lava.
Cooking The Cake
To bake, place the cake in the microwave and allow it to cook for 12 minutes. The cake will be extremely hot once it finishes cooking, so allow it to cool for at least three minutes. Once the time is up, take the cake out of the microwave and serve.
Optional
After the lava cake is cooked, you can top with powdered sugar. If you want an even richer cake, you can also melt some chocolate to drizzle over the top.
