Thanksgiving is still over a month away, but it’s never too early to start planning your feast with some new Thanksgiving recipes. I love experimenting with recipes for side dishes to create a new favorite, and Fried Corn with Bacon will definitely be on the table this year. Easy to prepare and a hit with everyone, this recipe makes enough to serve a large dinner party of 8-12 people.
8 slices of bacon, chopped into small pieces
3 – 4 cups of corn, either fresh or frozen
1 tbsp chives, finely chopped
1/4 cup butter
Salt and pepper, to taste
In a large saucepan or deep skillet (I use a wok), fry the bacon bits over medium heat until they are nearly crisp and evenly browned.
Add the corn and stir constantly until it is well mixed. Add the butter and mix until it is melted and begins to brown and caramelize.
Season with salt and pepper to taste, and stir in the chopped chives before serving.
This may not be the healthiest recipe, but it’s a tasty indulgence, and guaranteed to be a Thanksgiving staple on your table for years to come!
