Country style ribs are a tasty summer favorite. Cut from near the shoulder of the pork loin, they are a delicious, tender, messy treat. If you want to cook some for yourself, here is what you’ll need to do. To cook ribs for four people you will need two and a half pounds of country style pork ribs. For the seasoning you will want to have a tablespoon of garlic powder, a teaspoon of black pepper, fresh ground if possible, and two tablespoons of salt.

For the barbecue sauce you will need two cups of ketchup, two cups of tomato sauce, one and a quarter cups brown sugar, one and a quarter cups red wine vinegar, a half cup molasses, four teaspoons liquid smoke, two or three cloves of garlic, and two tablespoons butter. You can also add garlic powder, onion powder, chili powder, paprika, cinnamon, salt, and black pepper to taste.

First you will place the ribs inside a pot large enough to contain them, with just enough water to submerge them entirely. You will then season the ribs with the garlic powder, the black pepper, and the salt. You will bring the water to a boil. While the water is heating up, you should preheat the oven to three hundred and twenty five degrees Fahrenheit (one hundred and sixty five degrees Celsius). You should also grab a nine by thirteen inch baking dish and line it with aluminum foil.

In a separate pot mix together the ketchup, tomato sauce, brown sugar, vinegar, molasses, liquid smoke, and butter. Mince the garlic cloves with a knife and cutting board and stir them into the sauce. Season the sauce with a quarter teaspoon to a teaspoon each of the garlic powder, onion powder, chili powder, paprika, cinnamon, salt, and black pepper. When you have seasoned it to taste, reduce the heat to low. Stir it every few minutes. Leave the barbecue sauce on low for approximately twenty minutes. You can cook it for less time if you like thin sauce, or longer if you like it thick.

Once the ribs are tender, you will remove them from the boiling water and place them into the nine by thirteen inch baking dish. You will then pour one to two cups of the barbecue sauce on top of the ribs. Save the rest of the barbecue sauce for later. Cover the ribs with aluminum foil to keep the moisture inside, then place them inside the oven. Allow the ribs to bake for one to one and a half hours. Alternatively, you can use a meat thermometer and cook the ribs until they have reached one hundred and sixty degrees Fahrenheit (seventy degrees Celsius).

When they are finished remove the ribs from the oven, peal back the aluminum foil, and allow the ribs to sit for a few minutes before eating.
