This recipe is for baked sweet potato fries, a delicious and nutritious alternative to fried potatoes and an exciting change from the same old sweet potato dishes. These fries are tossed in olive oil which also has many healthy qualities. This oil is very good for you because it raises good cholesterol while lowering bad cholesterol and helps to prevent heart disease. These sweet potato fries are also seasoned with spices as opposed to the oil, butter, sugar and marshmallows some sweet potato dishes contain.
Ingredients are as follows:
-one to one and a half pounds of sweet potatoes
-¼ cup of olive oil,
-½ teaspoon of salt,
-½ teaspoon of paprika
-¼ teaspoon of cinnamon.
Pre heat oven to 425 degrees. Peel and cut sweet potatoes into strips as you would for fries. They should be no more than ¼ inch or so. It is important that they are all evenly sized so that they will cook evenly. Discard any irregular pieces.
Put the potatoes into a bowl and then coat with the olive oil making sure all potatoes are coated. Then add salt, paprika and cinnamon. Toss to thoroughly coat the sweet potatoes with the spices.
Line a baking pan with aluminum foil. Place sweet potatoes on aluminum foil lined pan spread out into a single layer. Make sure to not overcrowd potatoes. Place pan in oven and bake for 30 minutes. For best results do not touch potatoes for 15 minutes. At that time take pan out of the oven and flip the fries. Be careful because potatoes will be very soft at this point. Bake another 15 minutes or until lightly browned. When done transfer fries immediately to a paper towel lined plate and serve immediately. This recipe serves around 4 people.
