How To Make Easy Weeknight Burritos?
« on: February 07, 2013, 11:14:47 AM »
These easy weeknight burritos use taco fixing, but in an easier and freezer-friendly format. Just place all the ingredients in tortilla, and roll up to create a simply and dinner that kids will love!

Ingredients

1 lbs lean ground beef

1 package taco seasoning

1 red pepper, chopped

1 1/2 cups cheese, grated

1 package of tortilla wraps (corn or flour)

Directions

In a large saucepan, brown the meat over medium high. Add the seasoning and cook according to package or recipe directions.

Meanwhile, preheat the oven to 375F.

When the meat is cooked, assemble ingredients in the tortillas and roll them up, placing them side-by-side in a 9x13 baking pan. Cover with cheese or salsa, if desired.

Bake until tortillas begin to brown, about 20 minutes.

This sounds like a delicious, yet simple recipe!  Thanks for sharing it with us Leanne.  My husband & I usually just brown the ground beef in a skillet, drain it, and then add in the seasonings and a can of Ranch-style beans.  While it's heating up, we take the tortillas and wrap them in a clean, damp cloth and microwave them for about a minute.  Then when everything is done cooking, we fill the tortillas with the ground beef, bean and cheese mixture.  We also had lettuce and tomatoes and extra Fiesta-blend cheese.
